What Each Jar Actually Goes Through

Beyond where it’s sourced — the specific steps that actually turn each ingredient into a pickle.

✓ Mithila Special Mango — cut, sun-dried, then rested a full day in salt and turmeric before the spice mix goes in. Matures 8 to 10 days in the sun. ✓ Lal Mirch Bharua — each chilli deseeded by hand, then stuffed with roasted spices. The seeds go back into the masala, which is where the texture and slow-building heat come from. ✓ Grated Oal (Barobara) — grated down to remove chunks entirely. Lemon juice is added specifically to cut the itch that raw oal is known for. ✓ Garlic Ginger Green Chilli Mix — garlic, ginger and chilli kept in close to equal parts, lightly sun-dried before the mustard oil seals it. ✓ Tomato Garlic Chilli Chutney — the one jar in this pack that’s cooked, not sun-cured. That’s also the reason its shelf life is shorter than the rest.

Before you order

Does the process change between batches?

No. The same sourcing, cutting, drying, and sealing steps happen every batch, whether it’s the first jar of the season or the five hundredth.

Will every jar taste exactly the same?

Almost always, yes — but not with lab-level precision. Since there are no chemicals or stabilisers involved, batch-to-batch consistency sits around 95%, checked through tasting and quality control before anything ships

Does this pack contain garlic?

Yes. Two of the five jars use garlic — Garlic Ginger Green Chilli Mix and Tomato Garlic Chilli Chutney. If you’d rather avoid garlic entirely, the No Garlic Sample Pack is a separate five-jar set.

How long does it last?

18 months for the pickles. 12 months for the Tomato Garlic Chilli Chutney , since it’s cooked rather than sun-cured. 6 months for the Kheer Mixes.

How should I store it?

Keep it in a cool, dry place, not the fridge. Stir before use and always serve with a dry spoon.

How long does delivery take?

5 to 7 days, delivered pan-India.
