Achar Was Invented To Make Produce Last Beyond ItsSeason

So that’s exactly how we source it. Raw mango in peak summer, Oal from August, Kathal from March onward. Off-season produce doesn’t make a good achar, so we don’t use it.

  • Raw mango is sourced only at peak summer, when it’s actually ready for pickling
  • Oal isn’t sourced before August, no matter how much stock is needed
  • Kathal begins only from March onward, not earlier just to fill shelves

Free shipping, 3–7 days, pan-India · COD and UPI both available

NO MORE GUESSING THESEASON

If you’ve ever wondered which fruit or vegetable is actually in season

Or whether the mango or Oal in front of you is genuinely fresh, or simply haven’t had the weeks it takes to make achar yourself.

.

That’s exactly what this pack is built to answer. Five pickles, each one made only when its produce is actually ready. Not before.

WHO ACTUALLY MAKES THIS

Three decades of pickling. A business for five years. A team that's grown to fifty.

Made by Kalpana Jha and Uma Jha, in Darbhanga. The recipes were passed down from mother to daughter.

Every batch is tasted by expert mom-chefs before it ships.

Hand-mixed, oil-sealed, and sun-cured, the same way it’s been done in this kitchen for years.

Five jars, five processes

It's easy to print "traditional recipe" on a label. Harder to actually follow the process that earns it.

Here's the one thing that makes each jar in this pack genuinely traditional, not just labelled that way:

✓ Mithila Special Mango — cut into pieces, sun-dried, then left withsalt and turmeric for a full day before the spice mix and mustard oilgo in. Matures 8 to 10 days in the sun. ✓ Kuccha Mango (Grated) — peeled, sun-dried, then fully grated. Themoisture that separates during grating is discarded right away tokeep the pickle sharp rather than watery. Salt and turmeric rest 24hours before the masala and oil go in ✓ Khatt-Meethi Mango — peeled and briefly sun-dried, then saltedbefore sugar, roughly equal to the mango’s weight, is added.Everything cooks together for about 30 minutes over a low flame untilit thickens. ✓ Kathal (Jackfruit) — cut and steamed before pickling, letting itsoften naturally without breaking apart. Then marinated, spiced, andsun-matured ✓ Grated Oal (Barobara) — equal quantities of grated Oal, ginger, andgreen chilli. Lemon juice is added to reduce the itchiness raw Oal isknown for, and the mixture sun-matures slowly, with no chunks left init

QUESTIONS

Before you order

Why isn’t Oal available all year?

Because it’s only sourced when it’s actually in season, from August onward.

Off-season Oal doesn’t make a good pickle, so we wait rather than substitute.

Will the taste vary depending on when I order?

The recipe stays the same. Produce that’s just come into season can taste slightly
different from produce further along in its season — that’s how real fruit behaves, not an inconsistency in the recipe

Does this pack contain garlic?

No. All five pickles in this sampler are completely garlic-free.

How long does it last?

18 months for the pickles. 6 months for the Kheer Mixes

How should I store these?

Cool, dry place — not the fridge. Stir before use and always scoop with a dry spoon.

How long does delivery take?

3–7 days, delivered pan-India, free shipping.

Made Only When It’s Ready.
