The mango is picked for pickling, not for eating: Malda, Bijju, and Kalkatiya, all from Darbhanga farmers. Kalkatiya specifically has thinner skin and is more pulpy and juicy, which is exactly why it's chosen — that's a judgment call about what holds up in a jar, not a flavour preference.
