Raw mango, mustard oil, salt, whole spices - here's what that actually means.
"Whole spices" isn't a vague claim on this jar — it's a specific, nameable list. Coriander, cumin, ajwain, fennel, fenugreek, kalonji, yellow mustard, rai, hing, dried mango powder, black salt. Every one of them raw. None of them roasted, none of them a filler.
That's the standard: no chemicals, no preservatives, nothing you can't picture in your own kitchen. Just mango, mustard oil, salt, and a full bench of whole spices - each one there for a reason, not to bulk up a label.
THE PROCESS
Not one spice in this pickle is roasted. Here's why that matters.
Roasting is the shortcut most masalas take to round out flavour fast. This recipe doesn't take it. Every spice goes in raw, kept bright and true to itself — the mustard oil does the rounding instead, slowly, the way it's always been done in Mithila kitchens.
Saunf is coarsely cracked and never touched by heat, so its cool sweetness survives. Ajwain stays whole, doing its quiet work underneath. Yellow mustard is crushed for only a few seconds and added dead last, so it never turns sharp before it's meant to. Nothing here is roasted to save time - the oil and the sun-curing are what round every flavour out.
THE BALANCE
A good pickle isn't the one where one flavour shouts the loudest.
It's the one where every ingredient knows its place. Here's the order this pickle is actually built in:
- The mango cures alone first - 2 full days in salt and turmeric, before any masala comes near it.
- The oil is kept lean ― enough to support the spices, never enough to drown them.
- Coriander and cumin build the base - the flavour most people expect from a mango achar.
- Ajwain and fennel add lift - warmth underneath, coolness on top, neither one crowding the other.
- Mustard and hing finish it — mustard added last so it stays clean, hing in the smallest

Is this pickle very spicy?
No — heat is present but stays in balance with the other spices, never the dominant note.
Does it contain garlic or onion?
No. This recipe has no garlic or onion in it.
Will every jar taste exactly the same?
Almost always, yes — but not with lab-level precision. Since there are no chemicals or stabilisers involved, getting the exact same consistency batch to batch is genuinely difficult with real food. What we rely on instead is getting each batch to roughly 95% consistency with the last, backed by our quality check and tasting process before anything ships.
How spicy - I mean, is it very oily?
No. The oil is kept deliberately lean — enough to preserve and support the spices, not to soak the mango.
How long does delivery take?
3 to 5 days, delivered pan-India.
