It starts with just salt and turmeric

The mango is cut into pieces - skin on, kernel in- and coated by hand in salt and turmeric. Nothing else goes in at this stage. 

It sits like this for 48 hours. Not simmered, not rushed- just left alone while the salt draws moisture out of the mango naturally. The juice that comes out isn't drained away. It stays in the vessel, because it carries the mango's own sourness — and the dissolved salt — forward into the pickle.

The masala is never roasted

Once the mango has cured, the spice mix is prepared separately. Every spice goes in raw — coriander, cumin, fennel, red chilli, fenugreek, carom, all of it. Nothing is cooked or roasted first. The mustard oil does the rounding-out work that roasting would otherwise do. 

Fennel is the one that makes this recipe what it is. It's coarse-crushed, never roasted, so it keeps a cool, faintly sweet lift instead of turning flat and cooked. Most mango pickles lean on chilli, mustard, and sourness alone - this one carries a full note of fennel underneath all of that. Most people can't name what's different. They just notice the pickle tastes more complete. 

Yellow mustard is crushed last, and only for a few seconds - long enough to release its sharpness, short enough that it doesn't turn harsh. Add it too early, and it dominates everything else in the jar. 

Before the masala ever meets the mango, a small pinch is tasted on its own. At that stage it's meant to taste strong, even a little overpowering - that's how you know it'll be right once it's mixed through a full batch, not diluted into blandness.

Seven days in the sun

Once the masala and cooled mustard oil are mixed through the cured mango, the jars go out into the sun for seven days. Every few days, the pieces are checked to make sure they're staying under the oil line - repositioned if needed, never topped up with extra oil, so the ratio stays exactly as intended. 

If monsoon weather arrives before the seven days are up, the batch moves indoors and finishes sun-curing later in the season, once the weather allows. Nothing gets shipped early 

to hit a deadline.

Every batch is weighed and logged

Before a batch is considered finished, it's weighed. That number gets written down, batch by batch, so the process can be checked and refined over time — not left to guesswork. Dried mango powder is also added to the masala specifically to keep the sourness consistent, regardless of how tart or sweet that particular season's mangoes happen to be.

Before you order

Is this pickle very spicy?

No — heat is present but stays in balance with the other spices, never the dominant note.

Does it contain garlic or onion?

No. This recipe has no garlic or onion in it.

Will every jar taste exactly the same?

Almost always, yes — but not with lab-level precision. Since there are no chemicals or stabilisers involved, getting the exact same consistency batch to batch is genuinely difficult with real food. What we rely on instead is getting each batch to roughly 95% consistency with the last, backed by our quality check and tasting process before anything ships.

How spicy - I mean, is it very oily?

No. The oil is kept deliberately lean — enough to preserve and support the spices, not to soak the mango.

How long does delivery take?

3 to 5 days, delivered pan-India.

How should I store it?

Keep it in a cool, dry place - not the fridge. Always stir the pickle and use a dry spoon each time you take some out.
