All the pickles you received are dried naturally, in the Sun.
A few products may also be steamed/cooked on a slow flame like Khatt-Meethi, Amla — but they still spend 2-7 days in the sun.
This isn't something one can do easily in a city like Delhi or Mumbai.
So the next time you open the jar, relish the fact that these pickles are prepared in a warm, wonderful Mithila Sun :)

JhaJi Store is run by myself and Uma, my sister-in-law. 3 in every 4 people who work with us are women.
It is our mission to give Mithila's women self-reliance through this business.
This is why we prioritize hiring women at work, and fund education for girl-child locally with a share of the profits.
3. Produced in Small, Seasonal Batches 👌🏼
In Mithila, the tradition encourages people to indulge in 3-4 different types of pickles throughout the year, depending upon the season.
That is how we recommend enjoying Mithila's pickles. We'll always keep them fresh with the season and continue to make pickles in small batches.
4. Local Ingredients 🌶️
We make achar using unique local ingredients like Suran, or Amra. We prepare all pickles in Mustard Oil which is the traditional ingredient in Mithila's pickles and is also good for your health.
All the ingredients in your pickles come from local farmers and merchants. Most of the spices come from the traditional spices market in Samastipur.
