The process

How we actually pack these

Thekua is firm outside, but a jar that gets knocked around on the road can still crumble. So the packing is built layer by layer, from the inside out.

A small sachet inside the jar keeps oxygen out. The thekua sits in a food-grade PET jar. A steel lid is sealed over the mouth of the jar first, to keep moisture out. Then the cap goes on, then a plastic sleeve over the cap. The whole jar is wrapped in bubble wrap and packed into a 3-ply cardboard box.

Keeps it fresh: an oxygen absorber sachet (it helps thekua stay soft through its shelf life, and is not meant to be eaten), a light, clear and sturdy food-grade PET jar, and a steel lid sealed on first to keep moisture out.

Keeps it whole on the road: a cap screwed on over the steel lid, a plastic sleeve fitted over the cap, bubble wrap around the whole jar so knocks and bumps are cushioned, and a 3-ply cardboard box as the outer shell for the journey.

Ingredients and recipe

What's actually inside?

Whole wheat atta, desi ghee, jaggery (or sugar for Cheeni), dried coconut, rice bran oil, saunf and elaichi. No preservatives and no artificial colour.

Does it contain nuts or gluten?

It contains wheat (gluten). Thekua Original has no nuts. Please check before serving anyone with an allergy.

Is it vegetarian?

Yes. It contains ghee, so it is not vegan.

Taste and texture

Is the outside hard to eat?

The outside is firm so it holds its shape. Once you bite in, it turns soft and crumbly. Cheeni is crisper than Gud.

Gud or Cheeni: which should I pick?

Pick Gud for the traditional taste, warm and jaggery-sweet, with a soft, crumbly bite. Pick Cheeni for a lighter, cleaner sweetness and a crisper bite.
