Thekua is a Bihari festive sweet — dense, hand-shaped, and deep-fried, at the centre of Bihar's biggest festive season every year. Every home has its own version.

This one comes from the same Darbhanga kitchen, the same hands, and the same all-natural sourcing already trusted through JhaJi Store's pickle range — and builds it up with almond, cashew, and pistachio, folded through the dough.

The dough itself doesn't change: ghee and dried coconut worked into whole wheat flour by hand until crumbly, never kneaded, then pressed by hand into a sancha, the traditional carved wooden mould, before a slow fry until deep golden and firm through.

What changes is what's inside — three nuts, roasted and cooled separately, then mixed in for texture and flavour that plain flour and jaggery alone can't give.

It's the richest, most textural thekua in the range, and the natural gift — dry-fruit sweets already carry a premium place in Indian gifting.

🍚 Gud or Cheeni — Which one to choose?

Gud (Jaggery) is the original base — deep amber-brown, warm and mineral-sweet, layered with the toasted aroma of roasted nuts. The richest, longest finish in the range.

Cheeni (Sugar) keeps the almond, cashew, and pistachio exactly the same — same roasting, same texture, same nut flavour. What changes is the base: a lighter golden-tan colour instead of deep amber, and a cleaner, milder sweetness that lets the roasted-nut aroma stand out a little more. Same craft, a lighter sweetness. The gifting appeal doesn't change either way — it was always about the nuts, not the sweetener.

Contains wheat (gluten) and tree nuts (almond, cashew, pistachio). Fried in rice bran oil, chosen for its stability — the ghee in the dough is what defines the flavour.


👩🏻🍳 How we make Thekua

It starts the same way the Original does — desi ghee worked into whole wheat atta by hand until crumbly, no liquid added until this stage is done properly, and no kneading at any point.

Almond, cashew, and pistachio are roasted separately, each brought to its own point of toastiness, then cooled before going into the dough. Roasting them apart, rather than together, is what gives each nut its own distinct character instead of one flat "nutty" note.

Dried coconut, saunf, and elaichi go in alongside the nuts — the coconut for body, saunf and elaichi as the aromatics that belong in thekua by tradition.

Each piece is then pressed by hand into a sancha, the traditional carved wooden mould, before going into the oil low and slow — patient enough to cook all the way through without burning the outside, even with nuts folded through the dough.

The result: a piece with visible texture once broken open — flecks of almond and cashew, occasional glimpses of pistachio's green — richer and longer-finishing than the Original.
