More About the Pickle
One of the tastiest Bihari pickles, soft chunks of Jackfruit blended in rich spices and mustard oil. The right balance of spicy and tangy. Made by steaming the Jackfruit before sun-drying.
Jackfruit Pickle Ingredients
include Jackfruit, Mustard Oil, Turmeric, Red Chilli Powder, Coriander Powder, Cumin, Nigella Seeds, Carom Seeds, Fenugreek, Fennel Seeds, Yellow Mustard, Black Mustard, Asafoetida, Aamchor, Black Salt, Salt.
How we make the Jackfruit Pickle:
Our Kathal Ka Achar’s recipe is inspired from the traditional Maithil learnings handed to us over generations.
- The pickling process begins with washing, peeling, and the Kathal. The Jackfruit is then cut into small pieces, cleaned, and put out in the sun,for 8 hours, till the moisture dries up.
- The small pieces are put over steam for 10-15 minutes, so that they get softened.
- Thereafter, salt and turmeric are added, and the mixture is left for 24 hours.
- The spices are added along with the mustard oil. After a thorough round of mixing, the pickle vessel is kept out in the sun for 5-7 days.
- When the jackfruit softens, the pickle is ready and stored in martaban / glass jars.
