What it is and what to eat it with

What it is and what to eat it with
Raw mangoes from Darbhanga district, cut and sun-dried, rested with salt and turmeric for a day, then mixed with spices and mustard oil. The jar matures 8 to 10 days in the sun.

What it is and what to eat it with
Tomatoes slow-cooked with garlic, green chilli, mustard oil and spices until thick. It is cooked, not sun-dried, and has no chunks to bite through.

Most first-time disappointments come from expecting a different kind of pickle. This sets the picture straight.
Mustard oil, not vinegar
These are Bihari pickles cured in mustard oil with roasted spices. The mango, tomato and oal jars are tangy. The garlic ginger green chilli mix is warm and pungent, not sour.
Start with half a spoon
Heat differs from jar to jar. Try each one with plain rice, dal or khichdi first, and add more once you know it.
Each jar lasts 4 to 7 meals

Kalpana Jha had over 30 years of pickling behind her before 2020. Today she and Uma Jha work with about 50 home-chefs, and two or three of them taste every batch before it is packed.

Is 150g per jar enough to decide?
Each 150g jar serves about 4 to 7 meals, depending on how you eat, so you get several proper meals with every flavour. It is a tasting pack, not a month's stock. Once you know your favourite, full-size jars are in the shop.
Are these sour like the pickles I know?
These pickles are cured in mustard oil with roasted spices, and none of them uses vinegar. The mango, tomato and oal jars are tangy. The garlic ginger green chilli mix is warm and pungent, not sour.
Will a jar leak on the way?
The pickles come in sturdy 150g plastic jars. A thin layer of oil on top is normal and is not a leak, so stir gently before serving. If a jar arrives leaked or broken, send a photo on WhatsApp and we reship it free, straight away.
Will all five taste different from each other?
Yes, but they share a family resemblance. All five use mustard oil and roasted spices, so a few buyers find some jars close in taste. What changes is the base: dry stuffed raw mango, sun-matured mango, thin strips of garlic, ginger and chilli, slow-cooked tomato, and grated oal.
