The process
How we actually make these
Thekua is simple to list and hard to get right. It starts with desi ghee worked into whole wheat atta by hand until the mixture turns crumbly, before anything else goes in.
Almond, cashew and pistachio are roasted separately and cooled, then folded in with dried coconut, saunf and elaichi. Each piece is pressed by hand into a carved wooden sancha, then fried low and slow until deep golden, so the inside cooks through before the outside darkens.
No maida, no palm oil, no preservatives.

What's actually inside?
Whole wheat atta, desi ghee, jaggery (or sugar for Cheeni), dried coconut, rice bran oil, almond, cashew, pistachio, saunf and elaichi. No preservatives and no artificial colour.
Does it contain nuts or gluten?
Yes: almond, cashew and pistachio, and it contains wheat (gluten). Please check before gifting or serving anyone with an allergy.
Is it vegetarian?
Yes. It contains ghee, so it is not vegan.

The nuts are the same in both. Pick Gud for the traditional taste, warm and jaggery-sweet, with a soft, crumbly bite. Pick Cheeni for a lighter, cleaner sweetness and a crisper bite.

Where is it made?
In Darbhanga, Bihar, in the same kitchen that makes our pickles.
How is the jar packed?
Layer by layer: a steel lid under the cap, a plastic sleeve over the cap, bubble wrap around the jar, then a 3-ply cardboard box. A small sachet inside the jar is an oxygen absorber. It is not meant to be eaten, so please take it out and set it aside.

How long does it stay fresh, and how should I store it?
About 1 month at room temperature. Keep it in a cool, dry place, not the fridge, and close the jar tightly after opening.

Same dough and the same method. Dry Fruit adds almond, cashew and pistachio, and is the one made for gifting. Original has no nuts.
