Sorting, Cleaning, Roasting, and Grounding of spices is carried out in-house. All begins by cleaning the Oal, Ginger, and Green Chili in water, for 2-3 rounds. The tail of the green chili is removed. \u003c\/span\u003e\u003cspan style=\"font-weight: 400;\"\u003e\u003cbr\u003e\u003c\/span\u003e\u003cspan style=\"font-weight: 400;\"\u003e\u003cbr\u003e\u003c\/span\u003e\u003cspan style=\"font-weight: 400;\"\u003eOnce thoroughly washed, they are left in the sun for a couple of hours. And then chopped into smaller pieces for grating. Traditionally, this pickle has been prepared by mixing all these 3 ingredients in equal quantities. That’s why the name Oal Barabar is also used to address this pickle here in Darbhanga and nearby. It’s left untouched for 12-24 hours, as the moisture in the ingredients is drained and settles around it in the mixing vessel. We test it regularly for purity, and quality.\u003c\/p\u003e\n\u003ch3\u003eRECIPE: How we make the Aam ka Sukha Achar\u003c\/h3\u003e\n\u003cp\u003eThe Process of Preparation is inspired by the traditional techniques Kalpana observed her mother-in-law Tarini use to prepare this dry mango pickle. \u003cbr data-mce-fragment=\"1\"\u003eTypically, the mangoes for this pickle arrive in the evening around 7 PM, after being plucked from the trees on the same day. Immediately they are sorted in size categories. The small mangoes are not used for this pickle. Selected mangoes should be big enough to cut out 4-6 large pieces (2 inches * 1 inch). \u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eThe next morning, work begins by cutting the mangoes. As soon as a mango is cut, it’s dipped into water to take away the heat inside the mango. At the same time, a masala mix is prepared by adding together about a dozen different spices, and mustard oil. Everything is mixed well, till the masala blends together. The proportion of spices used is based on Kalpana’s experience. This pickle is now ready for sun-drying for 6-10 days.
